This asparagus and cheese tart was so delicious that I probably won’t make it in the near future. I started eating just once slice, but soon enough I had devoured more than half of it. This tart is just too tempting for me to prepare it often, but I will definitely make it for holidays and big get-togethers so I am forced to share this delectable cheesy treat.

I found a wonderful recipe for dumplings with a filling featuring asparagus so I wanted an Asian-inspired side to go with them. I could have made an asparagus lo mein (and I sort of did later), but I settled on what I expected to be a light and sophisticated treat: asparagus tempura.

It wouldn’t be asparagus week without a simple asparagus soup! Michael and I are attempting a more simplistic dinner routine since I just recently cut my finger (he thinks I cannot cook without my pinky apparently!), focusing on just a protein, a fruit, and a vegetable. Our first night in I was unable to just roast asparagus as that would have been “too easy” so I made a soup.

Recipe #1: Asparagus Pesto with Spring Herb Pasta

I have only ever had asparagus roasted… and….um…roasted with lemons. While I find it delicious, it has never been the most inspirational vegetable in my life. To start off the week, I tried my hand at making an asparagus pesto. I paired the pesto with homemade herb pasta (but it would also be delicious on toast or fish) and the final result had a clean and bright taste which embodied the spring perfectly.

This week at work organic avocados are SUPER on sale. They were $1.00 each (even less with my discount) so I bought a TON. With such a surplus, I had to figure out what to do with them. I decided to turn them into a chocolate coconut pudding – with a secret ingredient.
